What if I told you that you could have hot Steel Cut Oats & Quinoa every morning for breakfast in just a few minutes? If your home is anything like ours, mornings are busy! There are so many days when we are grabbing breakfast as we are running out the door – and making a really nutritious breakfast, like our Steel Cut Oats & Quinoa Oatmeal – can be difficult. But I have a solution! Here’s what I do. One night a week, usually Sunday, I make a big pot of Steel Cut Oats & Quinoa Oatmeal while I am cooking dinner. I allow it to cool while we eat and then I pour the oatmeal into a greased muffin tin. I cover the muffin tin and place in the freezer overnight. The next morning I have 12 servings of oatmeal that can just be popped in the microwave throughout the week. Easy Peasy!

Ingredients:

2 cups Steel Cut Oats & Quinoa Oatmeal

4 cups water

4 cups milk (I prefer unsweetened almond milk)

Directions:

In a large pot, combine oatmeal, water & milk. Bring to a boil, reduce heat and simmer for 20 minutes. Remove from heat and allow to cool. (The oatmeal may be very soupy after 25 minutes. It will thicken as it cools). Grease a 12 muffin tin and fill with oatmeal. Cover with aluminum foil and freeze overnight. To remove oatmeal, remove from freezer and let sit for a few minutes. Oatmeal should pop out. Store in freezer and take out as needed. Enjoy!
