- 1 package Southwest Better than Breadcrumbs, rehydrated
- 1/2 medium onion, finely diced
- 1 jalapeno, seeded and finely diced
- 1/4 cup corn (optional)
- 1 can or two cups of black or pinto beans, rinsed and drained
- Add beans to a large bowl and mash with fork.
- Add remaining ingredients and mix with hands.
- Form into burgers.
- Refrigerate for 30 minutes.
- Saute in pan with 1 tbs of oil until browned on both sides.
- Serve with kale salad.
