Ingredients:

  • 1 package Southwest Better than Breadcrumbs, rehydrated
  • 1/2 medium onion, finely diced
  • 1 jalapeno, seeded and finely diced
  • 1/4 cup corn (optional)
  • 1 can or two cups of black or pinto beans, rinsed and drained

Directions:

  1. Add beans to a large bowl and mash with fork.
  2. Add remaining ingredients and mix with hands.
  3. Form into burgers.
  4. Refrigerate for 30 minutes.
  5. Saute in pan with 1 tbs of oil until browned on both sides.
  6. Serve with kale salad.
