1 package Garlic Clove Foods Santa Fe Pilaf or Gluten Free Santa Fe Pilaf, prepared as directed
3 – 4 bell peppers
1 tbsp olive oil
1/2 medium onion, chopped
1 can fire-roasted diced tomatoes, partially drained
Preheat oven to 350°. Core the peppers and rub with olive oil. Place on hot grill for about 3 minutes on each side. In large bowl, combine pilaf, onions and tomatoes. Stuff mixture into peppers. Top with bread crumbs and shredded cheese. Bake at 350°for 25 minutes.
