Last week I shared my Meal Plan and while that is one of the few things that keep me sane, the other part is a well-stocked pantry. Over the years I have found that the foundation for feeding my family healthier is keeping my pantry stocked with the basics. No matter how well I meal plan, there is usually one meal a week I’m scrambling for. For me it’s usually lunches for one reason or another, but I also have those nights where I get home too late to follow my meal plan or I forgot to run to the grocery store on the way home. The last thing I want to do on those days is eat out, so a well-stocked pantry is a must. Now, to be completely honest, I do always keep a cabinet full of our products – that always ensures I have something to prepare for my family and send for lunch. I can’t tell you how often my kids take burrito bowls to school! But I also keep my pantry (and fridge) stocked with lots of other things – potatoes, onions, beans, mushrooms, whole grains, etc. Here’s a basic list you can use.
Now that you have a well-stocked pantry, what can you do when you’re in need of a quick meal? Here are 5 meals that I rely on:
- Quick Chickpea Ratatouille
- Potato and White Bean Soup
- Chipolte Santa Fe Burrito Bowls
- Garden Pilaf Summer Rolls
- Pesto Pasta & Beans
