Ingredients:

  • 1 package Lentil Soup
  • 6 cups low sodium vegetable broth
  • 2 cloves garlic, minced
  • 1/2 medium onion, diced
  • 1 medium carrot, diced
  • 2-3 medium red potatoes, small diced
  • 1/2 bunch kale, stem removed and chopped

 

Directions:

  1. In large stockpot, saute onion until translucent.
  2. Add garlic, carrot, potato and kale. Saute until fragrant.
  3. Add 6 cups of broth and bring to a boil.
  4. Add contents of Lentil Soup package.
  5. Simmer, uncovered, for 20 minutes.
