- 1 package Lentil Soup
- 6 cups low sodium vegetable broth
- 2 cloves garlic, minced
- 1/2 medium onion, diced
- 1 medium carrot, diced
- 2-3 medium red potatoes, small diced
- 1/2 bunch kale, stem removed and chopped
- In large stockpot, saute onion until translucent.
- Add garlic, carrot, potato and kale. Saute until fragrant.
- Add 6 cups of broth and bring to a boil.
- Add contents of Lentil Soup package.
- Simmer, uncovered, for 20 minutes.
