Halloween is this Monday…

Jack O’Lantern Pilaf Peppers


1 package Pilaf, cooked as directed

2 cups shredded chicken

1.5 cups shredded cheese

4 bell peppers

To assemble, cut the top off of the peppers and remove seeds.  Fill a pot with water and bring to a boil.  Carve out face with pairing knife, being careful to keep the eyes and mouth small enough to keep stuffing inside.  Place each pepper in the boiling water for about 4 minutes to soften.  Remove and drain.
Preheat oven to 350.  In a bowl, mix together pilaf, shredded chicken and 1 cup of shredded cheese.  Spoon mixture into peppers and place in baking dish.  Sprinkle with remaining cheese and bake for 20 minutes.  Enjoy!
