Black Beans. They are delicious, versatile and budget friendly. Loaded with fiber and protein, black beans are a must-have on a vegan or vegetarian diet. Black beans are also a great source of folate, vitamin B1, phosphorus and magnesium, as well as antioxidant and anti-inflammatory phytonutrients.
Black beans are one of my favorite foods, and I’ve put them in as many products are possible and I often eat Black Bean Taco Soup for breakfast!
