This is one of my favorite ways to serve Black Bean Taco Soup – a big bowl with a slow cooked sweet potato. Baking sweet potatoes brings out their creamy goodness – and throwing them in the slow cooker does the same thing!

For the potatoes:
Wash 5-6 sweet potatoes well (do not dry) and place directly into slow cooker. Cover and turn on low. Cook for 6-7 hours or until tender.

For the soup:
Bring 6 cups of broth to a boil. Add contents of package and simmer for 20 minutes. Top with avocado, onions and tortilla strips. Make it your own and enjoy!
