Our Basil than Breadcrumbs are delicious with salmon and make a simple and easy Basil Salmon Cake!
- 1 pkg Basil Better than Breadcrumbs, re-hydrated
- 1 lb cooked and flaked (or you can use 2 cans of salmon, drained)
- 1/4 cup red onion, finely diced
- 1/8 cup fresh basil, chopped
- zest of one lemon
- 2 eggs, beaten
- In large bowl, combine all ingredients.
- Form into patties – I like to do slider size patties.
- Refrigerate patties for 30 minutes up to 1 day.
- Saute in 1 tbs oil until browned on each side.
- Serve with arugula salad.
