Ingredients:

  • 1/2 medium onion, diced
  • 1 medium carrot, peeled and diced
  • 1 package mushrooms, chopped
  • 3 cloves garlic, minced
  • 1/2 bunch kale, stem removed and chopped
  • 6 cups vegetable broth
  • 1 tbsp olive oil
  • Harvest Bean & Quinoa Soup

Directions:

  1. In large pot, saute onions in olive oil over medium heat until translucent.
  2. Add mushrooms, carrots and garlic, saute another 2 minutes.
  3. Add vegetable broth and bring to a boil. Add contents of package and kale.
  4. Simmer for 20 minutes.
  5. Serve with a toasted baguette and a salad.
