Cilantro – Lime Santa Fe Salad Recipe

Santa Fe Pilaf, cooked & cooled
1/2 cup diced mixed bell peppers,
1/4 cup diced red onion, optional
1/4 cup corn (we use frozen)
1/4 to 1/2 cup diced mango, to taste
1/2 cup diced pineapple, optional
For dressing
1 jalapeno pepper, seeded and diced
1 clove garlic
3/4 tsp minced fresh ginger root
1/4 cup lime juice
1/3 cup honey
2 tsp balsamic vinegar
1/2 tsp salt or to taste
1/4 cup packed cilantro leaves
1/2 cup extra-virgin olive oil
Prepare dressing: Place jalapeno pepper, garlic clove and ginger into food processor; pulse until the jalapeno and garlic are finely chopped. Pour in the lime juice, honey, balsamic vinegar and salt, add the cilantro leaves; pulse a few times to blend. Turn food processor on and slowly drizzle in the olive oil until incorporated into the dressing. Season to taste with salt before serving. Prepare Salad: In large bowl, combine all ingredients and toss with dressing.
